show Abstracthide AbstractIn this proyect, the microbiota of diverse vinegars was characterized by using 16S rRNA Amplicon Sequencing throughout the course of three acetification processes of alcoholic raw materials: alcohol wine, fine wine, and craft beer media. The study and comparison of the biodiversity of different vinegars may contribute to improving the understanding of the microbial communities' role in the vinegar-making industry.
